In a medium bowl, whisk together the soy sauce, peanut butter, honey, lime juice, cumin, coriander, cayenne pepper (if using), and minced garlic until smooth.
Add the chicken strips to the bowl with the marinade, and toss to coat the chicken evenly with the sauce. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
